Baked minced fresh salmon patties with exotic herbs and citrus dressing
Bring a little exotic flavour to the table!

Ingredients for one serving
- 200 g chilled salmon fillet
- 1–2 stalks of fresh onion (shallot / chives)
- 1 pinch of turmeric
- 1/5 tsp freshly grated ginger
- 1 pinch of salt
- 1 pinch of black pepper
For the dressing
- 20 ml lemon juice
- 30 ml extra virgin olive oil
- 5 g honey
- 5 g Dijon mustard
Method
- Cut the boneless, skinless salmon fillet into small cubes about the size of a lentil.
- Add the finely chopped fresh onion, fresh ginger and the remaining seasonings, and mix well in a bowl.
- With a spoon, shape 3–4 patties from the mixture and place them on a tray lined with baking paper.
- Bake in a preheated oven for 10–15 minutes at 180 °C.
- For the sauce, combine the ingredients in a small screw-top jar, close the lid and shake vigorously until smooth.
Tips
- Choose fresh salmon from trusted suppliers for reliable quality.
- Dampen the tray lightly with water so the baking paper sticks better.
- Season the dish and the dressing to taste — the amounts are a guide.
- Lemons vary in acidity, and salt varies in saltiness; baking time also depends on the oven. Trust your own taste.
- Rice, potatoes, vegetables or fresh salads all work well on the side.
